Pudachi Vadi (Kothimbir Vadi)
Pudachi Vadi is an authentic Maharashtrian dish, which is also known as Kothimbir Vadi. Many of you might have tried Kothimbir Vadi, but today I am sharing a recipe on authentic Kothimbir Vadi filled with lots of kothimbir stuffed in a pocket and deep fried which you can enjoy anytime you wish to have it. You can have it as an evening snack, tea time snack, breakfast or appetizer. In english kothimbir means Coriander leaves or Cilantro. Pudachi Vadi Ingredients (Stuffing) 2-3 cups of finely chopped coriander leaves 1 onion finely chopped Half cup grated coconut (dry roasted) 1-2 tsp poppy seeds 3-4 tsp lemon juice 1 tsp sugar 2 tsp ginger chili paste 1 tsp sesame seeds Salt as per taste 1 tsp red chili powder (optional) 2 tsp oil Recipe Heat oil in a pan add finely chopped onions and sauté till they become soft.
