Pudachi Vadi (Kothimbir Vadi)

Pudachi Vadi is an authentic Maharashtrian dish, which is also known as Kothimbir Vadi.
Many of you might have tried Kothimbir Vadi, but today I am sharing a recipe on authentic Kothimbir Vadi filled with lots of kothimbir stuffed in a pocket and deep fried which you can enjoy anytime you wish to have it. You can have it as an evening snack, tea time snack, breakfast or appetizer.
In english kothimbir means Coriander leaves or Cilantro.


Pudachi Vadi

Ingredients
(Stuffing)
  • 2-3 cups of finely chopped coriander leaves
  • 1 onion finely chopped
  • Half cup grated coconut (dry roasted)
  • 1-2 tsp poppy seeds
  • 3-4 tsp lemon juice
  • 1 tsp sugar
  • 2 tsp ginger chili paste
  • 1 tsp sesame seeds
  • Salt as per taste
  • 1 tsp red chili powder (optional)
  • 2 tsp oil
Recipe

Heat oil in a pan add finely chopped onions and sauté till they become soft. Add ginger chili paste to the onions and mix well. 
Now add finely chopped coriander leaves to it and add poppy seeds, grated coconut, sugar, lemon juice, sesame seeds and salt as per your taste and mix well.
Cook the mixture well on medium flame.
Add red chili powder if you wish to have bit spicy taste. Adding chili powder is optional.
Switch off the flame and take out the mixture in a bowl and allow it to cool down to the room temperature.

Ingredients

  • 2 cups gram flour
  • Half tsp red chili powder
  • Half tsp turmeric powder
  • Half tsp cumin powder
  • Salt as per taste
  • Oil for greasing
  • Water to knead the dough
Recipe

Take gram flour in a mixing bowl and add dry spices red chili powder, turmeric powder, cumin powder and salt to it. Now star adding little water to it and knead the ingredients into a soft dough like we make for rotis. Grease the dough with little oil. Let the dough rest for few mins.

  • Ready coriander mixture
  • Gram flour dough
  • Oil for frying
Recipe

Make small ball out of the gram flour dough. Take one ball and roll it like we roll a roti using a rolling pin. Now using a spoon stuff the coriander mixture in the center of the gram flour roti.
Close the roti from all the sides giving it a shape like pocket.
Make all the pockets following the same steps.

Heat enough oil in a wok for frying. Slowly add the pockets into the oil and fry them on a medium flame. Fry all the vadis.
Serve hot with ketchup or any chutney of your choice. 




*Note - You can give any shape you like.
*Note - You can increase or decrease the quantity of sugar and lemon juice as per your taste.
*Note - If you don't have green chili available at your home you can add red chili powder depending upon your taste.
