Aaloo Baingan Dry (Potato Eggplant Dry)

Usually we see many people don't like baingan (eggplant) but for eggplant lovers I have a simple and tasty recipe to share. This is a dry vegetable recipe so we can carry in a lunchbox as well. So lets begin... Aaloo Baingan Dry Ingredients 2 medium sized potatoes 7-8 small eggplants 1 medium onion finely chopped 1 medium tomato finely chopped 2-3 tsp coriander leaves finely chopped 2 tsp oil 1 tsp cumin powder 1 tsp coriander powder 1 tsp red chili powder Half tsp turmeric 1 tsp garam masala powder Salt to taste Half cup of water Recipe Peel off potatoes and chop them, keep them dipped in water. Cut the eggplants and keep them dipped in water. Now finely chop tomato, onion and coriander leaves. Heat oil in a fry pan and add finely chopped onion to it and sauté for 2-3 mins. Sharing an Italian recipe with you all. Pizzas, Pastas are all time favorite these days in young generation and kids. Kids are cheese lovers so they love these dishes because lots of cheese is added to these dishes. So lets add cheese and tomato in pasta and pizza and start enjoying our favorite dishes and fulfill our food cravings! Pasta Ingredients Pasta of your choice (Penne, Macaroni, Swirl, etc) 2 medium sized tomatoes 1 green chilli 2-3 garlic cloves 1 glass of milk 2 tsp of all purpose flour (maida) 4 cheese cubes or 4 cheese slices 1 bell pepper (capsicum) chopped 1 onion chopped 1 small cup of boiled french beans 1 small cup boiled corn kernels Black pepper powder 1 tsp Oregano 1 tsp chilli flakes Half tsp paprika A jar of water 2 tsp butter 2 tsp oil Recipe Boil the pasta adding enough water to it. In India there are 29 states and one of them is Maharashtra and in Maharashtra there is a region known as Vidarbha. Today I am sharing a Maharashtrian or we can say Vidarbhian recipe with you known as Gola Bhat (गोळा भात). In English we can call it gram flour balls served with steamed rice. In India most of the people know what Gola Bhat is, but today the recipe that I am sharing with you is very different from the regular one. I learnt this recipe from my Mother-in-Law. Aaloo Bonda Rassa is one of street food dish commonly known as batata vada in some regions of India. In India, Aaloo bonda is eaten with rassa (a spicy gravy). It is a very famous and beloved dish. A spicy dish you can have it for breakfast, brunch, lunch or dinner. It is one of one-meal dish which you can have any time and enjoy with your friends and family. Aaloo Bonda Ingredients 6-7 medium sized potatoes 2 cups of gram flour 3-4 tsp oil 3-4 medium sized onions chopped 3-4 green chillies finely chopped 5 garlic cloves (crushed) Coriander leaves finely chopped 2 tsp turmeric powder 1 tsp red chilli powder 1 tsp coriander powder 1 tsp cumin powder 2 tsp of lemon juice Salt as per taste 2 cups of water Oil for frying Recipe Boil the potatoes in a pressure cooker till you hear 3 whistles. Tomato Onion Uttapam

South Indian cuisine is much loved across India, especially its wide variety of breakfast dishes like Idli, Dosa, Uttapams. However there is much more to South Indian cuisine including a large variety of rice dishes, one-dish meals, main course dishes, accompaniments like chutneys, pickles, salads, etc. Today I am sharing one of my favorite South Indian dishes: Tomato Onion Uttapam. Batter Ingredients 3 cups of rice 1 cup of skinless black gram (Urad dal) Fenugreek seeds 1 tsp Salt as per taste Recipe Soak rice, black gram & fenugreek seeds separately for 7-8 hours. Blend them in a grinder to a smooth paste, add salt and leave them to ferment for 7-8 hours or overnight. Our batter is ready. You can use the same to prepare Dosa. Aaloo (potatoes) and Gobi (Cauliflower) are the vegetables that we usually find readily available in our kitchen. We also find this dish in restaurant's menu. There are many ways to prepare this dish but I wish to share my favorite recipe with you today.
