Kothimbir Vadi is a most delicious snack that can be made at home simply anytime using few ingredients that we find in our kitchen. Earlier I shared Pudachi Vadi which is also known as Kothimbir Vadi. Todays recipe is another version of Kothimbir Vadi that I am sharing with you that is easier to make and is shallow fried. Usually these Kothimbir Vadis are deep fried but the recipe I am sharing is shallow fried. You can serve these Kothimbir Vadis as an appetizer, evening snack, tea time snack. I personally love these with our Indian Masala Chai. Enjoy making this simplest recipe of Kothimbir Vadi. We get to see this version of Kothimbir Vadi in Mumbai or Pune region in India. Pudachi Vadi is an authentic Maharashtrian dish, which is also known as Kothimbir Vadi. Many of you might have tried Kothimbir Vadi, but today I am sharing a recipe on authentic Kothimbir Vadi filled with lots of kothimbir stuffed in a pocket and deep fried which you can enjoy anytime you wish to have it. You can have it as an evening snack, tea time snack, breakfast or appetizer. In english kothimbir means Coriander leaves or Cilantro. Pudachi Vadi Ingredients (Stuffing) 2-3 cups of finely chopped coriander leaves 1 onion finely chopped Half cup grated coconut (dry roasted) 1-2 tsp poppy seeds 3-4 tsp lemon juice 1 tsp sugar 2 tsp ginger chili paste 1 tsp sesame seeds Salt as per taste 1 tsp red chili powder (optional) 2 tsp oil Recipe Heat oil in a pan add finely chopped onions and sauté till they become soft.
