Baingan Bharta - Dhaba Style
Baingan Bharta is one of my most beloved dish. I love to eat it with jowar or bajra roti with minced chilies.
Today I am sharing a street style or dhaba style recipe of Baingan Bharta.
Baingan Bharta is basically a South Asian dish that originated in Punjab with resemblance to Baba ghanoush. Baingan Bharta is a part of national cuisines of India, Pakistan, Bangladesh.
It's a classic side dish.
Baingan Bharta
Ingredients
- 1 large eggplant
- 3-4 garlic cloves
- 1 large tomato
- 1 large onion
- 2 green chilies
- Finely chopped coriander leaves
- 1 tsp red chili powder
- Half tsp turmeric powder
- 2 pinches of asafoetida
- 1 tsp cumin powder
- Half tsp coriander powder
- Salt as per taste
- 3 tsp oil
- 1 tsp cumin seeds
Recipe
Apply little oil over the eggplant and roast it over a medium flame. Let it cool down completely then remove burnt cover from it and mash it nicely. Keep it aside.
Finely chop onion, tomato, garlic and chilies.
Heat oil in a wok and add cumin seeds to it. Let them crackle and add finely chopped onions to it. Sauté onions till they become translucent. Now add finely chopped garlic and chilies to it. Mix well and cook it for 1 minute. Now add finely chopped tomatoes and toss them will. Cook all the ingredients till tomatoes are cooked nicely.
Now add all dry spices to it and mix well. Fry the dry spices for 1 minute stirring in between.
Now add roasted and mashed eggplant to it, add finely chopped coriander leaves and add salt as per taste and mix well. Cook on high flame for 2 minutes stirring continuously.
Serve hot with roti, jowar or bajra roti (bhakri)
