Handvo/ Handva

Today I am sharing a Gujrati recipe Handvo/ Handva with you all.
Handvo is a traditional Gujarati savory cake made up with mixed dal and some common spices that we use on daily basis. This recipe needs a very little oil so the diet cautious people can definitely enjoy this dish.
This dish can be enjoyed at the time of breakfast, evening snack or as an appetizer before lunch or dinner. A less spicy, healthy option to eat for all my foodies.



Handvo/ Handva
Ingredients
  • 2 cups rice
  • 1 cup gram dal (chana dal)
  • Half cup black gram dal (urad dal)
  • 1/4th cup split yellow gram dal (yellow moong dal)
  • 1 small cup grated bottle gourd
  • 1 small cup grated carrot
  • 1 onion grated
  • Half cup green peas
  • 2 tsp ginger garlic & chili paste
  • 1 tsp turmeric powder
  • Half tsp red chili powder
  • 1 cup sour curds
  • 1 tsp baking soda or 1 packet eno fruit salt.
  • 1 cup water
  • Oil to shallow fry handvo
  • 5-6 dry red chilies
  • Half cup sesame seeds
  • Half cup mustard seeds

Recipe

Soak rice, gram dal, black gram dal and split yellow gram dal for 12 hours or overnight.

Drain all dals and rice. Add curd to it and grind them to a paste in a grinding jar.

Let the mixture ferment for 7-8 hours depending upon the temperature in your city.

After fermentation, add grated bottle gourd grated carrot, grated onion and peas to the batter. Add ginger garlic and chili paste to it. Add turmeric powder, and red chili powder. Add salt as per taste and mix well. 

If you find the mixture too sour then you can add jaggery to adjust taste.

Warm up a cup of water. Add baking soda or eno fruit salt to the batter and add warm water to it and mix well.

Break the dry red chilies into pieces and keep aside.

Now heat a tsp oil in a wok and add 1/4tsp of mustard seeds to it. Immediately add 2-3 pieces of broken dry red chilies and 1/4tsp of sesame seeds and mix. Now add a laddle full of handvo batter over the tempering and cover it with lid. Let the handvo cook for 3-4 minutes on lower medium flame.
Open the lid and sprinkle some oil over the handvo and flip it to the other side and let it get cooked nicely.
Cook handvo from both the sides till you get a nice golden brown color.

Also you can insert knife in the center of handvo to check if it is cooked.

By following the same steps prepare the remaining handvo.

While serving cut the handvo into four pieces and serve it with ketchup or any chutney of your choice.




*Note - You can also simply heat oil and pour the batter over it and make handvo and later you can pour tempering over it.

*Note - If you find the batter is too sour then you can add jaggery to it to adjust taste.

*Note - You can add red chili powder as per you taste.
