Soupy Rice Noodles

Though they are kids, youngsters or some elders....everyone loves noodles....

Today I am sharing a yummy Rice Noodle recipe with you all.
I first time tasted these Flat Noodles at El Paso, Texas and those yummy noodles were prepared by my husband.
The recipe I am sharing with you all is my Husband's recipe, I love the way he makes these rice noodles and I am sure that you all will love it too. This is a unique style of preparing these noodles with crushed peanuts, apple and mix veggies and some common Chinese sauces.
A spicy taste gives you an amazing change to the regular taste of noodles the we commonly get to eat in restaurants.



Soupy Rice Noodles
Ingredients
  • 1 pack of rice noodles
  • 1 apple
  • 1 cup cauliflower florets
  • 1 medium sized carrot
  • 1 tomato
  • Half cup peas
  • Half cup roughly chopped cabbage
  • 2-3 garlic cloves
  • 1 inch ginger
  • 1 medium sized green bell pepper
  • 1 cup spring onion greens
  • 4-5 white spring onions
  • 3-4 green chilies
  • 1 lemon
  • 2 tsp crushed peanuts
  • 2 tsp dark soya sauce
  • 1 tsp vinegar
  • 1 tsp green chili sauce
  • Half tsp black pepper powder
  • Salt as per taste
  • 2 cups water
  • 2 tsp olive oil or vegetable oil

Recipe

Roughly chop apple, carrots, tomato, cabbage garlic and ginger.
Finely chop spring onion greens and slice spring onion whites.
Slit green chilies. 
Slice green bell peppers.

Heat oil in a wok and add garlic and ginger to it and mix well. Now add half of the sliced spring onions and spring onion whites to it and fry them well. Now add half of the slit green chilies, half of the bell peppers, chopped apple, carrots, tomato and cabbage. Sauté all the vegetables nicely.

Now add dark soya sauce, vinegar, green chili sauce and black pepper to it and mix well. Now add water to it and add salt as per taste. Add crushed peanuts and squeeze lemon juice in it and mix well.

Mix all the ingredients well and let it boil for 5-7 minutes stirring in between.

Now strain the vegetables and keep them aside. The soup is ready.

Boil the rice noodles as per the instructions given on the packet.

Take the rice noodles in a bowl. Garnish the noodles with sliced green bell peppers, slit green chilies, peas, sliced spring onion whites and spring onion greens. Pour the soup over it and serve hot.

*Note - The vegetables that we boiled in the sauces can be served separately.
