Khaandeshi Methi (White Fenugreek)

Ingredients
  • 3 cups of finely chopped fenugreek
  • 2 cups of pressure cooked lentils (toor dal)
  • 5-6 green chillies (depend on your taste)
  • 3-4 garlic cloves
  • 1 small cup of peanuts
  • 1 tsp cumin seeds
  • 2 tsp oil
  • 2-3 cups of water
  • Salt as per taste
Recipe

Roast chillies on medium flame. Then blend chillies, peanuts and garlic all together in a grinder to a smooth paste adding water to it. Keep is aside for sometime.
Pressure cook lentils (toor dal) without adding turmeric powder to it.
Heat 2 tsp oil in a wok add cumin seeds to it. As the cumin seeds start to crackle add fenugreek leaves to it, mix well and cover it with a lid and cook it for a few mins.
Mix the peanut chili garlic chutney with pressure cooked lentils. Add 1 cup of water to it, keep this mixture ready.
After the fenugreek leaves are cooked add the lentil and chutney mixture to it. Add salt as per your taste. Bring it to boil. Add little water if you find it too thick.
Our White Fenugreek is ready.
