Lentil Soup

We being foodies, we love to try different variety of delicacies that we find all over the globe.
We get to eat varied dishes from various countries, states and regions etc. We also find a variety of food that people eat n villages as well.
So today we all are traveling to Mexico. We will be enjoying learning and then making and then eating Mexican dishes.
Today I am sharing a yummy Soup recipe with you all.
I am going to share the recipe of Lentil Soup with you all. This soup is one of the best options who wish to control their diet ;)
This soup is completely Oil Free and loaded with crunchy veggies. The awesome taste of this soup will take you to Mexico.
I got to learn this recipe when I was in New Mexico near USA. So this is an authentic recipe that I will be sharing with you all.



Lentil Soup
Ingredients
  • 2 cups lentils
  • 1 large tomato
  • 1 carrot
  • 2 spring onions
  • 1 garlic clove
  • 1 inch ginger
  • 1-2 jalapeƱos
  • 2 green chilies
  • 1 lemon juice
  • 1-2 tsp black pepper powder
  • 2 tsp chopped parsley
  • 3 cups of water
  • Salt as per taste

Recipe

Soak lentils for 2 hours.

Chop tomato, carrot, spring onions, jalapeƱos and green chilies.

Mince or grate ginger and garlic.

Heat 2 cups of water in a pan and add soaked lentils to it. Boil them for 3-4 minutes and add chopped vegetables to it.
Add more water to it and let it boil. Keep stirring in between.

Now add black pepper powder as per your taste
to it and mix well. Squeeze a lemon juice to it and add salt as per taste.

Mix well and let it boil for 8-10 minutes or till the lentils and all the veggies are cooked nicely.

Garnish the soup with parsley and serve hot...




*Note - Try adding Black Pepper Powder a bit more in quantity as it gives you a bit spicy taste and also an amazing flavor to your soup.
