Recipe

Chop onion and tomato into medium sized cubes. We don't have to chop them finely.
Slice chilies or slit them in to two.

Heat up oil in a pan and add mustard seeds to it. Let them crackle and add chopped onion and tomato to it. Cook them for 2 minutes by stirring in between.

Now add chilies and dry spices to it. Fry all the ingredients for 30 seconds more and then add cooked rice to it. Season with salt and mix well.

Cover the pan with lid and cook for 2 minutes more and serve hot.

You can serve this Tomato Onion Rice with any pickle of your choice or curd. Also you can have this rice as it is.

Also you can carry this in your lunch box.

*Note - If you wish your kids to have this rice or you want to pack this rice for them in their lunch box then reduce the quantity of red chili powder from it and skip adding chilies to it.
