Veg Kolhapuri

Veg Kolhapuri is a spice vegetable that goes best with roti, naan, paratha or steamed rice and pulao.
This can be a best treat for spicy food lovers.
Blend of aromatic spices and tomato onion paste with a pinch of yogurt taste makes it richer and creamier and spicier.
In simple words a mix vegetable curry with thick and spicy gravy, a famous dish in Mharashtrian Cuisine and found on every Indian Restaurant Menu card.



Veg Kolhapuri
Recipe
  • 1 medium sized potato
  • Half cup peas
  • 1 medium sized carrot
  • 6-7 cauliflower florets
  • Half cup roughly chopped french beans
  • Half cup sliced green bell pepper
  • 2 tomatoes pureed
  • 1 medium onion
  • 2 tsp ginger garlic paste
  • 1 tsp yogurt
  • Half cup finely chopped coriander leaves
  • 2 tsp red chili powder
  • Half tsp turmeric powder
  • 1-2 pinches of asafoetida
  • 2-3 tsp oil/butter
  • 2 cups of water
  • Salt as per taste.
For Kolhapuri Masala -
  • 2 tsp white sesame seeds
  • Half tsp poppy seeds
  • 2 tsp grated coconut
  • 4-5 blak peppers
  • 2 cloves
  • 1 tsp coriander seeds
  • Half tsp cumin seeds
  • 1 inch cinnamon stick
  • 1-2 pinch of nutmeg
  • 2 green cardamom
  • 2-3 kashmiri red chillies
  • 1 bay leaf
  • 4-5 fenugreek seeds

Recipe

For Kolhapuri Masala -

Dry roast all the masala ingredients till they become aromatic. Now take all the roasted ingredients in a grinding jar and grind them to a fine powder and add a little water to it then grind it to a smooth paste.


Veg Kolhapuri -

Roughly chop all the vegetables into cubes or batons and boil all of them for 5-7 minutes.

Heat oil or butter in a pan or wok and add finely chopped onions to it and sauté them till they become soft. Now add ginger garlic paste to and mix well. Cook them for 2 minutes and add tomato puree to it. Cook all the ingredients till the oil separates. Now lower the flame and add yogurt to it and cook for 2 minutes more.

Now add the masala paste we made and add 1 cup of water to it. Cook it for 2 minutes. Now add turmeric powder and red chili powder to it, mix well. 

Now add all the vegetables to it and add half cup of water to it. Add salt as per your taste and mix well. Let the vegetables cook on lower flame for 5 minutes covering it with a lid. Keep stirring in between.

Serve hot.
