Palak Paneer
Ingredients
  • 250 gms of spinach Leaves
  • 2-3 garlic cloves
  • Half inch ginger
  • 200 gms of paneer
  • Half tsp black pepper powder
  • 1 onion finely chopped
  • 1 tomato finely chopped
  • Half tsp turmeric powder
  • Half tsp red chili powder
  • 1 tsp garam masala
  • 1 tsp cumin powder
  • 2 tsp butter/oil
  • 1 bay leaf
  • 1-2 tsp yogurt
  • Water to boil spinach leaves
  • Salt as per taste

Recipe

Take enough water to boil spinach leaves. Let the water boil for 1-2 minutes then add spinach leaves to it. Let the leaves boil nicely then remove the leaves from the hot water and transfer them to cold water. This will help us to retain the natural color of the spinach leaves.

Now take the leaves and put them in a grinding jar and garlic cloves and ginger to it. Grind them to a smooth paste and keep it aside.

Cut the paneer into cubes and sprinkle some salt and black pepper powder over it and keep it aside. Keep 2-3 paneer cubes aside and crush them coarsely.

Heat butter/oil in a wok and add bay leaf to it and sauté for 30 seconds. Now add finely chopped onions to it and cook till they become translucent. Now add finely chopped tomatoes and cook them till we get a paste like texture of it. Now add yogurt to it and let it cook for 1 minute.

Now add dry spices turmeric powder, red chili powder, garam masala powder & cumin powder to it and mix well and let it cook for 30 seconds more. Now add spinach puree to it and mix well. Add salt as per taste. Now add paneer cubes and crushed paneer to it and let it cook for 2 minutes.

Serve hot.

*Note - Crushed panner gives creamy and a bit thick texture to our dish.

*Note - Adding curd to this dish makes it more rich and enhances taste.

*Note - You can skip garlic and ginger if you wish.

*Note - Instead of adding red chili powder to it you can add 2 green chillies to spinach while grinding.
