Kathi Roll - Mix Veg

Kathi Roll are delicious wraps or rolls stuffed with a spiced mix veg stuffing. These mix veg Kathi Rolls are a make for a good brunch, lunch or tiffin box snack.
These delicious Kathi Rolls are found in fast food chains, restaurants and even on street stalls in India. Now a days we get to see that food trucks in different countries too serve these Kathi Rolls.
Kathi Roll is originated from the streets of Kolkata, India and were made of grilled meat kebabs rolled in paratha. But we all being vegetarian, today I am sharing a vegetarian recipe of Kathi Roll.
This Mix Veg Kathi Roll is nothing but tongue tickling spicy mix of veggies wrapped in chapati or paratha.
We can make variety of stuffings for making kathi rolls. Today lets see how to make Mix Vegetable Kathi Roll recipe.



Kathi Roll - Mix Veg
Ingredients
  • 5-6 cauliflower florets
  • 1 medium sized carrot
  • 1 cup green peas
  • 1 onion 
  • 1 tomato
  • 1 cup cabbage
  • 1 small green bell pepper
  • 1 tsp red chili powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • Salt as per taste
  • 1 cup grated cheese
  • Tomato ketchup
  • Pickled onion
  • 4 rotis
  • 5 tsp butter

Recipe

Chop cauliflower florets.
Finely chop onion, tomato, carrot, green bell pepper and shred cabbage.

Pickled Onions -

Finely chop onion and season with salt, sprinkle red chili powder over it and squeeze lime juice and mix well.

Heat a tsp of butter in a pan and add finely chopped onions and tomatoes together and mix well. Cook till the tomatoes are cooked till they are soft.

Now add dry spices to it and mix well.

Now add other veggies to it and season with salt as per your taste and mix well.

Cook all the veggies by covering them with lid till they are tender and soft.

Remove the stuffing in a bowl.

Assemble Roll -

Heat a skillet and place a roti over it and apply little butter to it from both the sides. Heat it from both the sides and place the roti in a plate.

Place the ready stuffing over it in the middle of roti. garnish it with pickled onions and grated cheese. Top it with little tomato ketchup and roll tight.

Wrap the roll in an aluminum foil or butter paper.

Make the remaining rolls by following the same procedure and serve.
