Mix Veg - Dry

Mix Veg is an aromatic and a very tasty mixture of crunchy vegetables, that can be served with Roti, Paratha, Naan or Steamed Rice.
Today I am sharing a dry version of Mix Veg. This dish is very easy to make and can be made from the veggies that are available in your refrigerator and some common spices that you find in your kitchen. This is a North Indian style recipe that is prepared often at Indian homes to accompany the meals.
This recipe can be made in curry, semi curry or dry. 



Mix Veg - Dry
Ingredients
  • 1 cup cauliflower florets
  • Half cup chopped cabbage
  • 1 cup peas
  • 1 potato diced
  • 1 small carrot diced
  • 1 large onion
  • 1 large tomato
  • 2 garlic cloves
  • 1 inch ginger
  • 1 tsp red chili powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • Half tsp turmeric powder
  • Salt as per taste
  • 2 tsp oil

Recipe

Roughly chop onions and tomatoes and take them in a grinding jar. Add garlic cloves and ginger to it and grind all the ingredients to a smooth paste.

Heat oil in a pan and add the grounded onion tomato paste. Cook till the rawness is gone and oil oozes out of it.

Now add all the dry spices to it and sauté them for 30 seconds.

Now lower the heat and add all the veggies to it and mix well. Add half cup water to it, season with salt and mix well. Cover the pan with lid and cook for 10 minutes stirring in between.

Serve this Mix Veg - Dry with Roti, Naan, Paratha, Phulka and enjoy.
