Sopa De Tortilla

One more amazingly tasty MEXICAN DISH for you all.
Sopa De Tortilla is very tasty and very authentic Mexican Dish. I tasted it in a restaurant and later I tried it at home and turned out to be awesome.
We can also call it Tortilla Soup.
It also very healthy as it contains crunchy veggies.
Tortilla Soup encompasses all the things I love best in Mexican Cooking. So tell me do you like Salsa? Cilantro? Lime? Refried Beans? Tortilla Chips???? All these things goes in one soup and you enjoy the authentic taste of Mexican Food.
This soup has very less oil so even this is the best option for people who try to avoid oily stuff.
The charm of this soup lies in the toppings too, which you can customize as per your likings. This soup is very simple and once you make it at home it will be very popular weeknight or weekend dinner favorite that will never disappoint on your beautiful evenings. Its the perfect touch of spice to add some excitement to your dinner routine.


Sopa De Tortilla
Tortilla Soup
Ingredients
  • 2 tomatoes
  • 2 onions
  • 6 garlic cloves
  • 3 green chilies
  • 1 tsp black pepper powder
  • Half lime juice
  • 1 medium sized carrot
  • 1 cup corn kernels
  • 2 tsp rice
  • 2 cups tortilla chips
  • 1 tsp olive oil
  • Salt as per taste
  • 4 cups water


Recipe

Roughly chop tomatoes and 1 onion.

Heat a skillet over a medium heat. Place the roughly chopped tomatoes and onion on it. Also put chillies and 3-4 garlic cloves with skin over the heated skillet.
Roast all the ingredients well.

Remove the skin from roasted garlic. Add all the roasted ingredient to a grinding jar and grind them to a smooth paste and keep the paste aside.

Now finely chop the remaining onion and garlic and chop carrot into cubes.

Heat a tsp oil in a pan and add chopped onion, garlic and carrot to it.

Mix well and sauté for 1 minute.

Now add rice and the grounded tomato onion paste to it and mix well.

Add black pepper powder to it and season with salt.

Add 4 cups of water to it.

Let it boil for 15 minutes till the added rice is cooked nicely. 

At last add corn kernels to it and let it boil for 1 more minute.

Crush the tortilla chips coarsely and add them to the soup. Stir well and serve hot.

While serving squeeze lemon juice to it.


*Note - You can garnish this soup with jack cheese, avocado, cilantro and more crispy tortilla chips.
