Tomato Carrot Beetroot Soup

Soup is the best thing to start with lunch or dinner. Even the diet freak people love to have soup to maintain their health. Soup is one of the best medium for kids to have different veggies which they generally don't like to eat with rice or rotis. So today I am sharing one of the simple soup recipes with you. I got this recipe and idea of mixing these veggies and preparing a yummy soup from my sister-in-law.

Tomato Carrot & Beetroot Soup

Ingredients
  • 3 tomatoes
  • 1 carrot
  • 1 beetroot
  • 1 medium sized onion
  • 2-3 garlic cloves
  • 3-4 pepper corns
  • 2-3 cloves
  • Half inch cinnamon stick
  • 2-3 tsp butter
  • Salt as per taste
  • 3-4 cups water
Recipe

Heat a tsp of butter in a pan add cloves, pepper corns and cinnamon stick and sauté it for a minute. Then add crushed garlic, diced onions and sauté till the onions are translucent. Later add diced tomatoes, beetroot, carrot & 2 cups of water and bring it to boil till the water reduces to half.
Switch off the flame and strain the mixture. Do not throw the strained water, we can use the same water to adjust consistency of our soup later.
Grind the boiled veggies using a grinder to a smooth paste.
Heat half tsp of butter and add the grounded paste to it and add the strained water that we kept aside after straining the veggies. Let it boil for 2 mins. Add fresh cream and salt.
Serve hot and enjoy.



*Note - You can boil the veggies in pressure cooker too.
*Note - You can add sugar to the soup if you like.
*Note - I used unsalted low fat butter and low fat cream for making the soup.
