Gatte Ki Subzi

Gatte Ki Subzi is an authentic Rajasthani Dish. It is a delicious curry prepared with Gram Flour as a base ingredient. Gatte means cooked gram flour dumplings, which are added to the spicy onion tomato base gravy or curd base gravy.
This authentic Rajasthani cuisine is very delicious to eat and can be cooked at home. You can enjoy this dish with Parathas, Puris, or Steamed Rice.
Enjoy making this mouthwatering dish and I am sure that you won't be able to resist once you start cooking it. This Gatte Ki Subzi is usually made up in a curd base gravy. But you also get to see this dish is made in spicy gravy too.
Today we will see how to make Gatte Ki Subzi in spicy gravy today.


Gatte Ki Subzi
Ingredients

Gatte :-
  • 1 cup gram flour
  • 1 tsp red chili powder
  • Half tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 2 tsp oil
  • Salt as per taste
  • Water to knead the dough

Gravy :-
  • 1 large onion
  • 1 large tomato
  • 3-4 garlic cloves
  • 1 inch ginger
  • 2 bay leaves
  • Half inch cinnamon stick
  • 4-5 black pepper corns
  • 1 tsp red chili powder
  • Half tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp garam masala
  • Salt as per taste
  • 1 cup oil
  • 1-2 cups water

Recipe

Gatte :-

Take gram flour in a mixing bowl and add all dry spices to it. Season with salt a per taste. 
Start adding little water to it and knead a dough.

Heat enough water in a pan and let the water boil.

Take out medium sized balls out of the kneaded dough and shape them cylindrical.

Gently slip the gram flour dough cylinders into boiling water.

Cook all the cylinders for 15 minutes or simply till you see the cylinders start floating in the hot water.

Take out the gram flour cylinders out of water and place them in a plate and let them cool down.

After the gram flour cylinders are cooled completely then cut them into pieces and keep them aside.


Gravy :-

Roughly chop onions, tomatoes, garlic and ginger.

Heat a tsp oil in a pan and add onions to it. Let the onions cook till they start browning on the edges. Now add tomatoes, garlic, ginger, bay leaves, pepper corns and cinnamon stick to it. Fry all the ingredients for 2-3 minutes and remove them from heat.

Let all the ingredients cool down then grind them to a smooth paste by adding little water to it.

Heat up 4-5 tsp oil in a pan and add grounded paste to it. Cook the paste till you see oil oozing out of it.

Lower the heat and add all the dry spices to it. Fry the spices for 30 seconds and then add 1 cup water to it. Season with salt as per taste. 

Let the gravy boil for 2 minutes then add more half cup water to it and add the steamed Gatte to the gravy.

Cook the Gatte Ki Subzi for 3-4 minutes by stirring in intervals. You will see the gravy will start thickening.

Switch off the flame and the Gatte Ki Subzi is ready to serve.
