Fresh Corn Spinach

Leafy vegetables are one of the best medium to maintain health, especially spinach. Spinach is loved by most of the foodies. We can prepare variety of spinach dishes. I am surely going to share many dishes with you. For today I am sharing one of my most beloved dish with you all "Fresh Corn Spinach"

Fresh Corn Spinach

Ingredients
  • Half kg of spinach (whole leaves washed)
  • 1 cup of fresh corn kernels
  • 1 tsp cumin seeds
  • 2 tsp ginger garlic paste
  • 2-3 green chillies (depending upon your taste)
  • 2 pinches of asafoetida
  • Half tsp turmeric powder
  • Half tsp coriander powder
  • Half tsp cumin powder
  • Salt as per taste
  • 10-12 garlic cloves
  • Oil
  • Water
Recipe

Wash spinach leaves. Boil 3-4 cups of water in a pan and add spinach leaves to it. Boil the leaves for 5 mins, remove from the flame, strain the leaves and immediately pour cold water over the leaves (this will help to us retain the original color of spinach leaves)
Blend the spinach leaves in a grinder to a smooth paste.

Heat 2 cups of water in a pan add corn kernels to it and salt as per your taste. 

Heat oil in a pan add cumin seeds to it. As the cumin seeds start cracking add slit chillies, asafoetida, turmeric powder, coriander powder and cumin powder to it. Add boiled corn kernels and spinach paste to it. Add salt as per your taste and mix well. Cook for 2-3 mins.

Now chop then garlic cloves finely. Heat 2-3 tsp oil in a pan add garlic to it and fry till garlic turns golden brown in color. Our tempering is ready.

Pour corn spinach vegetable in a serving bowl and pour the garlic tempering over it and serve hot.

Tastes best with paratha. You can have it with roti, tortilla or rice.
You can enjoy this dish for your dinner or lunch. Can be a healthy one meal dish for you as well as it can be consumed with rice or roti.


*Note - Quantity of chillies depend upon your taste.
*Note - You can also add butter for frying chillies and then add corn and spinach to it.
*Note - Quantity of spinach and corn can depend on you.
