Veggie Quesadillas And Guacamole

Going international today, sharing a Mexican recipe with you my foodies! I have tasted authentic Mexican food and I just love it. Tried and thought of sharing with you all. I hope you will love this recipe and will enjoy it with your family and friends.

Veggie Quesadillas

Ingredients
  • 1 whole wheat tortilla
  • 1 medium sized onion
  • 1 medium sized tomato
  • 1 bowl of mixed bell peppers (red, yellow, green)
  • 1 jalapeño
  • 1 cup grated cheddar cheese Monterey jack cheese
  • Salt as per taste
  • 1 canola oil (any of your choice)
  • Taco sauce or tabasco sauce
Recipe

Put a flat bottom pan over a medium flame. Add a tsp of oil and add chopped onion and chopped bell peppers. Sauté them for a min. Now add chopped tomato and jalapeño. Add salt and tabasco sauce as per your taste. Sauté till its half done. Switch off the flame and keep the veggies aside.
Heat another pan or skillet and brush it with little oil and put one tortilla over it. Sprinkle cheese and top it with vegetables that we have kept aside. Then again spread cheese over the vegetables.
Now fold the tortilla half to enclose the filling. Once the underside is crisp gently flip it to the other side and fry for few mins.
Once it is done gently slide the tortilla on a serving dish and cut into wedges.


Guacamole

Ingredients
  • 1 ripe avocado
  • 2-3 cherry tomatoes finely chopped
  • 1 medium sized onion finely chopped
  • 3-4 tsp finely chopped cilantro (coriander leaves)
  • 1 tsp lemon juice
  • Salt as per taste
  • Olive oil (optional)
Recipe

Peel the avocado, scoop it in a bowl and mash it roughly. Then add chopped tomato, onion and cilantro. Then add lemon juice, salt and olive oil to it. Mix well to combine all ingredients together.



*Note - You can use taco sauce or simple tomato ketchup instead of tabasco sauce.
*Note - For filling veggies should be half cooked.
*Note - You can use low fat cheese
*Note - You can jalapeño or black pepper powder to guacamole if you like
*Note - You can make guacamole in advance and keep in refrigerator.
