Mix Vegetable Kofta Curry

Today sharing a sweet and spicy recipe, Mix Vegetable Kofta Curry.
An Indian recipe which we usually find in restaurant's menu. But we can also make this dish at home and can enjoy a rich dinner with our family and friends.
You can prepare this dish for your lunch, dinner or if you are hosting a party then this dish can become your first choice to impress your guests.



Mix Vegetable Kofta Curry

Ingredients
(Kofta)
  • 3-4 boiled potatoes
  • 1 cup grated paneer
  • Half cup grated carrot
  • Half cup grated cauliflower
  • Half tsp red chili powder
  • Half tsp cumin powder
  • Salt as per taste
  • 1 cup tsp corn flour
  • Oil for frying
Recipe

Peel potatoes and mash them finely in a mixing bowl.
Scramble paneer and add it to the potatoes.
Add carrots and cauliflower to the potatoes.
Now add dry spices red chili powder, cumin powder, salt as per taste, 3-4 tsp corn flour and mix well.
Form a soft dough out of the mixture.
Heat enough oil for frying in a pan.
Make small balls out of the dough. You can give any shape you like.
Dust some corn flour over the balls.
Now slowly add the balls to oil for frying. Fry the ball on a medium flame till they are nicely cooked and turn golden brown in color.
Take out the fried balls on kitchen towel.


Ingredients
(Gravy for Kofta)
  • 2-3 large tomatoes
  • 2 onions
  • 8-10 cashews
  • 2 bay leaves
  • 3-4 cloves
  • 4-5 pepper corns
  • 1 inch cinnamon stick
  • 3-4 garlic cloves
  • Half inch ginger
  • 2-3 green chillies
  • Half tsp kauri methi (Dry Fenugreek Leaves)
  • 3-4 tsp coriander leaves
  • 2 tsp butter
  • 2 tsp curd
  • 1 tsp red chili powder
  • Half tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp garam masala
  • 1 tsp sugar
  • Salt as per taste
  • 2 cups water

Recipe

Soak cashews for 30 mins. Later blend them to a fine paste.

Roughly chop tomatoes and onions. Take them in a grinding jar add garlic cloves and ginger to it and blend them all together to a fine paste.

Now heat butter in a pan and add bay leaves, pepper corns, cloves and cinnamon stick and fry them for 30 seconds. Now add the masala paste that we have blended and kept ready before.
Cook the masala paste till the rawness of it is gone you see the oil is separated.
Add cashew paste to and mix well. Cook on medium flame for 5 mins stirring in between.
Now add curd to it and mix well and cook on low flame for a minute.
Now crush kasuri methi between your palms and add it to the mixture.
Add slit green chillies to the masala paste.
Add dry spices red chili powder, turmeric powder, cumin powder, garam masala and mix well. Cook for a minute and add little water to it. 
Cook for 2 minutes then again add little water to it.
Consistency of gravy depends upon you, so add water accordingly.
Now add sugar to it and mix well.
Let the gravy boil for 2-3 minutes.
Now start adding fried balls to it, stir gently after you add kofta to the gravy. Cook for 2-3 minutes and switch off the flame.
Take out the kofta curry in a serving bowl and garnish with finely chopped coriander leaves and grated paneer and serve.




*Note - You can keep the balls and gravy separately, so while serving place the kofta in a serving bowl and pour gravy over it.
*Note - Quantity of red chili powder depends upon your taste.
*Note - If you wish to make the kofta curry sweet then skip regular red chili powder, you can simply add Kashmiri red chili powder for color.
*Note - Adding curd gives more richness to the gravy, but if you don't like the taste of curd you can skip it.
