Pav Bhaji

Pav Bhaji is one of the most loved dish. Pav Bhaji is a fast food from Maharashtra, India, consisting thick vegetable curry served with a soft bread roll.
Pav Bhaji is one of the yummiest street food. But considering hygiene we can prepare this recipe at home too and enjoy well.


Pav Bhaji

Ingredients

  • 4 large potatoes
  • 1 large or 2 medium green bell peppers
  • 1 cup cauliflower florets
  • Half cup green peas
  • 1 onion finely chopped
  • 2 tomatoes finely chopped
  • 2-3 tsp pan bhaji masala (I used everest pav bhaji masala)
  • 2-3 tsp finely chopped coriander leaves
  • Salt as per taste
  • 3-4 tsp butter
  • 1 tsp oil
  • 2-3 cups water
Recipe

Roughly chop bell pepper and cauliflower. Take them in a vessel and add 1 cup of water and pressure cook them for 3 whistles. Let them cool down.
Pressure cook potatoes for 3-4 whistles and let them cool down.

Take bell pepper and cauliflower in a grinding jar. Do not throw the water of the veggies.
Going the veggies to a smooth paste.

Boil peas in a microwave for 2 minutes.

Mash the potatoes nicely and keep aside.

Heat 2 tsp butter and 1 tsp oil in a pan. Add finely chopped onions to it and sauté them till they become soft. Now add finely chopped tomatoes to it and add 2-3 pinches of salt to it. Mix well.
Cook tomatoes and onions well till they become pasty. You can simply mash them using a masher or with the back of your cooking spoon.
Now add 2 tsp of finely chopped coriander leaves  and 2 tsp of Pan Bhaji Masala to it. Mix well and add cauliflower and bell pepper paste to it. Now add mashed potatoes to it. Add salt as per taste. Mix well. If you feel the curry is too thick then add water to it. We need a paste like texture of the curry. After you add water to the curry then adjust the taste of salt and add more pan bhaji masala to it.
Add the remaining butter to it. Boil the bhaji for 2-3 minutes on medium flame.


Serving

Cut the pav from center and spread some butter over them. Heat a skillet and place the pav over it. Cook pav from both the sides till you get crispy golden color. 
You can also sprinkle some red chili powder over the pav for taste.

Finely chop onions and coriander leaves. Cut lemon into pieces.

Now assemble pav in a serving plate. Take bhaji in a bowl and spread finely chopped onions and coriander leaves over it. Put a lemon piece aside in a plate and serve hot.



*Note - Quantity of pav bhaji masala depends upon your taste.
*Note - If you need to make pav bhaji bit spicy you can add some red chili powder to it.
*Note - I used everest pav bhaji masala, you can use any brand of masala that you like to use, we find many options available in the market.
