Dahi Vada

Dahi Vada is a dish made up with fried urad dal (black gram) dumplings dipped in sweet and sour yogurt topped with spices. Its a kind of chaat and is very popular dish in India.
Dahi Vada is also known as Dahi Bhalla in Punjabi. Before serving these vadas, they are soaked in water or buttermilk for half an hour at least.

Dahi Vada
Ingredients
  • 2 cups urad dal (split black gram - skin less)
  • Half inch ginger
  • 2-3 green chillies
  • 2-3 pinches of baking soda
  • 2 cups of yogurt or curd
  • 1 small cup red chili powder
  • 1 smal cup cumin powder
  • 1 small cup chaat masala
  • 1 small cup coriander powder
  • Sugar as per taste
  • Half cup tamarind pulp
  • 1 cup coriander leaves
  • 2 cups butter milk
  • Salt as per taste
  • Oil for frying

Recipe

Soak urad dal for 4-5 hours.

Take the soaked dal in a grinding jar add chillies and ginger to it and blend into a smooth fluffy batter. Add little water to the batter of paste like texture.
Add salt as per your taste and baking soda to it. Mix well and let it rest for fermentation for 1-2 hours.

Heat enough oil for frying in a wok. Using a spoon start adding small quantity of batter to the oil for making vadas and frying them. Fry them till the vadas are cooked and you get nice golden color of them.

Add salt as per you taste to the buttermilk and add the fried vadas to it. And let them get soaked in buttermilk for half an hour.

By the time take the yogurt in a mixing bowl. Depending upon the taste of yogurt add sugar to it depending upon your taste. Mix well.

After the vadas are soaked nicely. They are ready to serve.

Place 2 vadas in a serving plate. Pour the sweetened yogurt over it. Pour 1 tsp of tamarind pulp. Sprinkle red chili powder as per your taste, 2 pinches of cumin and coriander powder, 2 pinches of chaat masala and 1 pinch of salt. Garnish with finely chopped coriander leaves and serve.




*Note - You can soak the vadas in normal water too. But soaking them in buttermilk add more taste to the dish.

*Note - The quantity of spices on vadas depend upon your taste.
