Hot & Sour Soup

Today sharing a soup recipe from Indo Chinese cuisine. This soup recipe is aptly titled Hot And Sour Soup. The hot element comes from black pepper or chillies or red and green chili sauces. The sour element comes from vinegar. The veggies in this soup depends upon your choice, you can add sprouts, mushrooms or mixed vegetables.
This Hot And Sour Soup is a good starter recipe with Indo Chinese menu. The recipe of this soup is quite simple and easy to prepare anytime you like.



Hot And Sour Soup
Ingredients
  • 1 small carrot
  • 1/4th cup cabbage
  • 1 small onion
  • 2-3 spring onions with its greens
  • 1 tso ginger garlic paste
  • 3-4 green chillies 
  • 1 small green capsicum (optional)
  • 1-2 tsp vinegar
  • 2-3 tsp corn flour
  • 1 tsp green chili sauce
  • 1 tsp red chili sauce
  • 2 tsp soya sauce (dark)
  • 1 tsp sugar (optional)
  • Salt as per taste
  • 1 tsp oil
  • 3 cups water

Recipe

Finely chop carrot, cabbage, onion and spring onions and its greens.
Heat oil in a pan and add onions to it, sauté well and add ginger garlic paste to it. Mix well. Cook for a minute and add remaining veggies and chillies to it. Cook all the veggies for 1 minute and add green chili sauce, red chili sauce and soya sauce to it and mix well. Add vinegar and mix well.

Mix corn flour in a little water and form a paste of it. Add this paste to the veggies and mix well. Now add water to it and stir continuously. The soup will start becoming thick. Add salt as per your taste. You can also add little sugar to it but it is completely optional.

Mix well and let it boil for 2-3 minutes. Garnish with spring onion greens and serve hot.



*Note - Adding sugar is completely optional.
*Note - You can also add 1 or 2 tsp tomato ketchup to add tangy taste to the soup.
*Note - If you wish to have more spicy soup you can increase the quantity of chillies to it.
