Sooji Halwa
Sooji Halwa is a very popular Indian sweet dish and is made on religious occasions as prasad (for god). After prayer it is served to devotees as a blessing.
Sooji Halwa is also known as Rawa Sheera.

Sooji Halwa
Ingredients
- 1 cup sooji (rawa/semolina)
- 1 cup sugar
- 7-8 saffron strands (you can use saffron syrup)
- Half cup mixed dry fruits
- 1 cup milk
- 2-3 tsp clarified butter (ghee)
Recipe
Soak saffron strands in 3-4 tsp milk.
Heat clarified butter (ghee) in a pan and add sooji to it. Roast sooji on a medium heat till the light sweet aroma comes out of it.
Then add half of the milk to it and keep stirring. Add sugar. Here I have mentioned 1 cup sugar but the sweetness depends upon your taste so you can add sugar as per your taste.
Add saffron and milk mixture and more milk to it if it is dry and mix well. Add mixed dry fruits and mix well.
Cook well till you get a thick consistency of halwa or sheera.
Serve hot.
You can store this in refrigerator for 3-4 days in an air tight container.
*Note - Quantity of sugar depends upon your taste.
*Note - You may increase the quantity of milk if feel like halwa is dry.
*Note - You can add any dry fruits of your choice.
