Ragda Patties

Ragda Patties is very famous street food served with tangy & spicy chutneys. Its one of very famous kind of chaat we can find in any city of India. A very popular fast food from Maharashtra.

Ingredients :-

 For Patties -
1. Potatoes (Boiled) 5-6
2. Bread Slices 5 or Bread Crumbs 1 small bowl
3. 3 Tsp Corn Flour.
4. Onion finely chopped
5. Coriander finely chopped 3-4 Tsp
6. Red Chili Powder 1 small spoon
7. Turmeric Powder 2 small spoons.
8. Salt (as per taste)
9. Oil for frying

For Ragda -
1. White peas or dried green peas 1 cup
2. Onion finely copped
3. Tomato finely chopped
4. Cumin powder 1tsp
5. Coriander powder 1 tsp
6. Red Chili powder half tsp
7. turmeric powder half tsp
8. Water 2 cups
9. Salt (as per taste)
10. Oil 2 tsp

For Serving -
1. Green chutney
2. Imli Chutney
3. Red Chilli powder
4. Yogurt
5. Nylon Sev
6. Finely chopped Onions
7. Finely Chopped Tomato
8. Finely chopped coriander

How to prepare Ragda -

Soak the peas for 7-8 hours. Drain the excess water and add fresh water to it and pressure cook them adding half tsp of salt for 4-5 whistles.
In a deep pan take 2 tsp of oil, ones the oil is hot add onions and sauce them till they are translucent. Add the chopped tomatoes and cook them till they become pasty. Then add the dry spices red chili powder, turmeric, cumin powder & coriander powder. Now add the cooked peas and salt to taste. Add some water to make pouring consistency of the ragda. Boil it for few minutes and turn the flame off.

How to prepare Patties -

Boil the potatoes in a pressure cooker unto 4-5 whistles. Cool them and peel off. Mash the potatoes nicely.
Cut the side of the bread and soak them in water, remove excess water from the bread and mash them in potatoes. Add corn flour, chopped onions & coriander. Add the dry spices red chili powder, turmeric and salt as per taste. Mix and make soft dough.
Divide the dough into parts and and roll the each part between your palms and give a patty like shape to each ball and keep aside. Dust some corn flour over it and let it rest for some time.
Heat 4-5 tsp of oil in a fry pan and put each patty over it. Ones the patty is half done from one side then flip it to the other side. Fry the patties till they are of nice golden brown color. then remove them over a tissue.

How to serve -

Place one patty in a bowl, pour the ragda over it. Add chopped onions, tomatoes over it. Top it up with imli chutney, green chutney & yogurt, then add the nylon sev over it sprinkle the red chili powder and coriander leaves.
