Aaloo Baingan Dry (Potato Eggplant Dry)

Usually we see many people don't like baingan (eggplant) but for eggplant lovers I have a simple and tasty recipe to share. This is a dry vegetable recipe so we can carry in a lunchbox as well. So lets begin...

Aaloo Baingan Dry

Ingredients
  • 2 medium sized potatoes
  • 7-8 small eggplants
  • 1 medium onion finely chopped
  • 1 medium tomato finely chopped
  • 2-3 tsp coriander leaves finely chopped
  • 2 tsp oil
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp red chili powder
  • Half tsp turmeric
  • 1 tsp garam masala powder
  • Salt to taste
  • Half cup of water
Recipe

Peel off potatoes and chop them, keep them dipped in water. Cut the eggplants and keep them dipped in water. Now finely chop tomato, onion and coriander leaves.
Heat oil in a fry pan and add finely chopped onion to it and sauté for 2-3 mins. Add tomato and 2 pinches of salt and mix well till the tomatoes are cooked nicely. Add a tsp of coriander leaves to it and mix well. 
Now add dry spices turmeric, red chili powder, cumin powder, coriander powder & garam masala. Mix all the ingredients well and add the chopped potatoes and eggplants to it and mix again. Add half cup of water to it and mix well and salt as per your taste. Keeping lid over the pan cook the vegetable for about 15 mins or till the potatoes and eggplants are cooked nicely. Keep stirring in between the coking process. If you feel water is needed you can add a bit of water to it.
Once the vegetable is cooked it is ready to be served. You can have this Aaloo baingan dry with roti, tortilla, bread or paratha.


*Note - While cooking any vegetable if you add 1-2 pinches of asafoetida (hing) to it, it tastes even better and also asafoetida is good for health.
