Aaloo Bonda-Rassa

Aaloo Bonda Rassa is one of street food dish commonly known as batata vada in some regions of India. In India, Aaloo bonda is eaten with rassa (a spicy gravy). It is a very famous and beloved dish. A spicy dish you can have it for breakfast, brunch, lunch or dinner. It is one of one-meal dish which you can have any time and enjoy with your friends and family.

Aaloo Bonda

Ingredients

  • 6-7 medium sized potatoes
  • 2 cups of gram flour
  • 3-4 tsp oil
  • 3-4 medium sized onions chopped
  • 3-4 green chillies finely chopped
  • 5 garlic cloves (crushed)
  • Coriander leaves finely chopped
  • 2 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 2 tsp of lemon juice
  • Salt as per taste
  • 2 cups of water
  • Oil for frying
Recipe

Boil the potatoes in a pressure cooker till you hear 3 whistles. Let them cool down, peel off and mash them roughly. Heat 2-3 tsp oil in a wok, add onions and sauté them till they are translucent. Add finely chopped chillies. Add dry spices turmeric, red chili powder, coriander powder and cumin powder. Mix all the ingredients well and add the mashed potatoes and salt as per your taste. Mix them well and cook for 2 mins. Add coriander leaves and lemon juice mix well and keep aside.
Take the gram flour in a bowl add salt as per your taste, add half tsp turmeric and mix well. Add water to it to make a paste like texture of the gram flour.
Heat oil in a wok for frying the bondas. Make medium sized balls of the potato mixture and dip them in the gram flour mixture one by one. Make sure that each bonda is coated well from every side and dip it in the oil slowly. Fry the bondas till they are golden in color on a medium flame.
Follow the same steps and prepare the remaining bondas.



Rassa

Ingredients
  • 2 medium sized onions roughly chopped
  • 1 medium sized tomato roughly chopped
  • Boiled black chick peas & sprouts of your choice
  • Oil
  • 5-6 garlic cloves
  • 1 inch ginger
  • 3-4 pepper corns
  • 1 tsp coriander seeds
  • Half inch cinnamon stick
  • 1 bay leaf
  • 3 cloves
  • 2-3 tsp grated dry coconut
  • 2 kashmiri red chillies
  • 2 Tsp red chilli powder
  • Kashmiri red chili powder 1 tsp (if needed)
  • Half tsp turmeric powder
  • 1 tsp garam masala
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • Salt as per taste
  • Coriander leaves finely chopped
  • 5 Cups of water
Recipe

Heat oil in a pan and add onions and fry them till those are translucent. Add bay leaf, pepper corns, cinnamon stick, cloves, kashmiri red chili and coriander seeds to it and fry for 2 mins. Add grated coconut and fry all the ingredients till the onion turns golden brown in color. 
Put all the above ingredients in a grinder, add tomatoes, garlic cloves and ginger to it. Blend it to a smooth paste without adding water.
Heat 4-5 tsp of oil in a sauce pan and add the onion tomato paste to it. Cook till the oil is separated. Add dry spices turmeric powder, red chili powder, cumin powder, coriander powder and garam masala. Mix well and add boiled black chick peas and sprouts, mix well. Add water to it, we need thin gravy so you can add 4-5 cups of water to it. Add salt as per your taste. Add Kashmiri red chili powder if needed for color. Add coriander leaves and serve with bondas.


Green Chutney

Ingredients

  • 2 cups of coriander leaves
  • 4 green chillies
  • 4 garlic cloves 
  • Salt as per taste
Recipe

Blend all the ingredients in a grinder to a smooth paste. Chutney is ready to serve.

Serving

Put 2-3 Aaloo bondas in a plate, take some raise in a bowl and take some green chutney and serve the hot, tasty, spicy Aaloo Bonda Rassa.



*Note - You can also have some fried green chillies with aloo bonda rassa.
*Note - Quantity of red chili powder in raise depends on your taste.
*Note - You can also have some curd with it, rassa tastes spicy and tangy if you add curd to it while eating.
