Aaloo Gobi Masala (Dry)

Aaloo (potatoes) and Gobi (Cauliflower) are the vegetables that we usually find readily available in our kitchen. We also find this dish in restaurant's menu. There are many ways to prepare this dish but I wish to share my favorite recipe with you today. The recipe I am sharing with you is easy and quick and as it is a dry vegetable recipe so you can also easily carry with you in a lunchbox to work or while traveling, you could also pack your kids' lunchbox for schools :)

Ingredients -

  • Cauliflower roughly chopped 1 bowl
  • 2 medium sized potatoes sliced
  • 1 medium onion finely chopped
  • 1 medium tomato finely chopped
  • Cilantro (Coriander) finely chopped 4-5 tsp
  • 1 cup of water
  • Oil 2 tsp
  • Cumin seeds 1 tsp
  • Red chilli powder 1 tsp or as per your taste
  • Kashmiri red chilli powder half tsp (for flavor & color)
  • Turmeric powder half tsp
  • Cumin powder 1 tsp
  • Coriander powder 1 tsp
  • Garam Masala 1 tsp (you can find it in any provisional store)
  • Salt to taste
Recipe -

Heat 2 tsp of oil in a fry pan and add cumin seeds. As the cumin seeds start crackling add finely chopped onion and saute it till it is translucent. Next add the finely chopped tomato and saute it till it becomes soft and the rawness is gone. Add a tsp of coriander leaves while tomatoes are cooking. Now add the dry spices turmeric, red chili powder, Kashmiri red chili powder, cumin powder, coriander powder and garam masala powder. Mix them well and add cauliflower and potatoes to it, add the remaining coriander leaves and salt as per taste and mix well.
Add little water so with the help of water steam veggies will be cooked nicely.
Cook the vegetable on a medium flame. Keep adding little water. We don't want to make gravy so we don't want vegetable to be watery. Cover it with a lid. Keep stirring the vegetable. Cook it up for 15 mins on a medium flame.
Now transfer it to a bowl & serve :) You can eat it with roti, tortilla, bread or paratha.


*Note - While cooking tomatoes for any recipe you can add 2-3 pinches of salt to it. Salt help tomatoes to get cooked bit faster.
