Lauki Kofta
Ingredients
For Kofta :-
- 1 lauki (Bottle Gourd)
- 1 cup besan (Gram Flour)
- 1 tsp red chili powder
- Half tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- Salt as per taste
- Oil for deep frying
For Gravy :-
- 1 large tomato
- 1 large onion
- 3-4 garlic cloves
- 1 inch ginger
- 2 tsp grated dry coconut
- 4-5 black pepper corns
- 2 bay leaves
- 2 green cardamons
- 1 inch cinnamon stick
- 1 tsp red chili powder
- Half tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp garam masala
- 3 tsp butter
- 2 tsp oil
- Salt as per taste
Recipe
Kofta :-
Wash and pat dry lauki. Peel off and grate it. Lauki is watery so you need to keep it squeezing to remove excess water out of it.
Add all dry spices to it and add gram flour and mix well.
Heat up oil for frying.
Take out small parts out of the lauki dough angholila d shape it like patty, round or cylinder and make koftas.
Fry all the koftas till they turn golden brown in color and turns crispy.
Drain them on kitchen towel.
Gravy :-
Roughly chop onions, tomatoes, garlic and ginger.
Heat a tsp of oil in a pan and add onion to it. Fry onions till they start turning golden brown. Then add tomatoes to it and mix well. Cook them for 2 minutes and add ginger, garlic and grated coconut to it and cook for 2 more minutes.
Switch off the heat and let all the ingredients to cool down.
Take all the ingredients in a grinding jar and add bay leaves, cinnamon stick, cardamoms and black pepper corns to it.
Blend all the ingredients to a smooth paste by adding very little water to it.
Now heat butter in a pan and add the grounded paste to it. Cook the paste well till the oil oozes out of it.
Now add all the dry spices to it and mix well. Fry all the ingredients for 30 seconds.
Now add half cup water to it and mix well. Season with salt as per your taste.
Add more water and cook the gravy for 2 minutes.
While serving place a kofta in a serving bowl and pour gravy over it and garnish with finely chopped coriander.
*Note - Do not dip koftas in gravy for too long otherwise they will become soggy.
*Note - After you squeeze the extra water (juice) out of lauki, do not through it away, you can use that juice replacing water in the gravy.
*Note - After you squeeze the juice out of lauki you can simply season that juice with salt as per your taste and drink that juice. Lauki juice is best for your Heart ❤️
