Lemon Coriander Soup

Today I am sharing an amazingly easy and a very tasty tangy soup recipe with you all.
LEMON CORIANDER SOUP....
You can make this soup anytime you like and keep your self warm this winter or simply anytime when you feel like having soup.
This soup is quite different than regular soups that we usually make at home. Also you can make this soup completely oil free so people who like to maintain their diet can enjoy this soup without any guilt.
This is the best way to live fit and happy life despite this daily inconvenience, is to boost your natural immunity and including Vitamin C rich foods in your diet is one way of achieving this. This Lemon Coriander Soup is made with Vitamin C rich ingredient "Lemon". This soup is palate pleasing clear soup made with healthy ingredients and it is very light for stomach and will rejuvenate you instantly.



Lemon Coriander Soup
Ingredients
  • 1 small onion
  • 1 small carrot
  • 2 garlic cloves
  • 2 green chilies
  • 1 cup finely chopped coriander leaves
  • 1 lemon
  • 1 tsp black pepper powder
  • 1 Tea spoon olive oil (Optional)
  • 2 tsp corn flour
  • Salt as per taste
  • 4 cups water

Recipe

Finely chop onion, carrot, garlic cloves and chilies.

Heat oil in a pan and add onions to it and sauté till they become translucent. Then add finely chopped garlic and green chilies and mix well. Sauté for one minute. 
Then add carrots and mix well.
(We don't have to over cook the veggies, we need to retain their crunch)

Now add water to it and bring it to boil.

Mix corn flour with little water and form a paste.

Add black pepper powder and salt as per your taste to the boiling mixture and mix well.

Now add corn flour paste to it and keep stirring it and bring it to boil. You will see the soup will start thickening.

Now lower the heat and add finely chopped coriander leaves and squeeze half lemon's juice to it and mix well. (Adjust sour taste of lemon as per your taste)

Let the soup boil for 2 minutes and serve immediately.
