Spinach Rice

SPINACH RICE....this is an interesting variation on the basic rice side dish. It is very tasty all on its own with lots of Vitamins, Antioxidants, Iron and Fiber.
Spinach adds color, flavor and contributes a lot of nutritional value to your rice.
This Spinach Rice is also known as Spanakorizo in Greek Language.
This is one of the best options when you are in search of One Pot Meal. 
We see kids generally don't like eating regular vegetable made of spinach with roti so this is also one of the nicest options that you can feed your kids and I am sure they will love it.




Spinach Rice
Ingredients
  • 2 cups long grain rice
  • 1 cup spinach puree
  • 1 small onion
  • 1 small tomato
  • 3-4 cauliflower florets
  • 1 small carrot
  • 1 green chili
  • 2 bay leaves
  • 1 tsp cumin seeds
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • Half tsp red chili powder
  • Salt as per taste
  • 2 tsp oil

Recipe

Cook rice in microwave for 14-15 minutes depending upon the rice quality or as per instructions given on the packet.

Slice onions, dice cauliflower florets and carrot, finely chop tomato and slit green chili into two.

Heat oil in a pan and add cumin seeds to it and let them crackle. Now add sliced onions and tomatoes to it and mix well. Sprinkle 1-2 pinch of salt so the tomatoes will be cooked faster. Now add bay leaves to it and cook for 1 minute.

Now add cauliflower and carrots to it and mix well. Now add cumin powder, coriander powder and red chili powder to it and mix well.

Now add spinach puree to it, mix well and let it cook for 2 minutes covering it with a lid.

Now add cooked rice and salt as per taste, mix well and cook it on low heat for 2 minutes and serve.
