Veg Noodle Soup

Usually we find Vegetable broth readily available in markets, but today I am sharing a veggie broth recipe with you all.

Veg Noodle Soup
Ingredients
Broth :-
- 4 cups of water
- 1 large tomato
- 1 green bell pepper
- 1 small stick of lemon grass
- 3-4 green chilies
- 3 spring onions
- 4-5 coriander leaves stems
- Green pea pods (Whole green peas)
- 1 tsp black pepper powder
- 3 tsp light soya sauce
- 1 tsp schezwan sauce
- Salt as per taste
- 1 pack noodles of your choice (Hakka noodles, Rice noodles or glass noodles) You can also use egg noodles if you like
Garnish :-
- 1 finely chopped spring onion
- Finely chopped coriander leaves
- 1 finely green chili
- Grated carrots
- Lemon
Recipe
Broth :-
Roughly chop all the veggies.
Heat water in a pan and add roughly chopped veggies to it. Boil the water and veggies on medium heat by covering it with lid till the veggies are tender and soft.
After boiling veggies nicely drain them from the broth.
Keep the broth on low heat again. Now add soya sauce, schezwan sauce, black pepper powder and salt as per taste to it and mix well. Now add green pea pods to it. Keep it boiling on a low heat.
Boil noodles as per instructions on the packet and keep aside.
Take a bowl and add small quantity of boiled noodles to it and pour the soup over it. Garnish the soup with finely chopped spring onion, green chili, grated carrots and coriander leaves. Squeeze lemon juice over it.
Serve noodle soup before lunch or dinner. Also you can have this soup anytime you like.
*Note - You can also sprinkle a little quantity of Sesame oil over the soup to enhance taste.
