Rasam

Rasam Rice is one of my favorite South Indian cuisine. Rasam means juice in Tamil or Telgu. It can mean any juice, but in South Indian cuisine Rasam is a thin soup made with tamarind, tomatoes and some spices. It is good to have when its a cold weather.  Rasam can be refrigerated and stored for 2-3 days.  The recipe I am sharing is without Rasam Powder. We usually get Rasam powders readily available in markets but if you don't have powder available at your home so you can make it easily by following the recipe I am sharing with you all. Potato Croquets is one of the easiest recipes to make when you have kids around, also as an evening snack or also you can serve it as an appetizer before lunch or dinners to your guests.  This can be one of the best options to have at pool parties.  It takes just a little effort to make these yummy Potato Croquets. Potato Croquets Ingredients 3-4 boiled potatoes Half cup carrot shredded Half cup boiled peas 1 tsp ginger garlic paste 1 cup bread crumbs or semolina 1 tsp green chili paste Half cup mozzarella or processed cheese 1 tsp black pepper powder Salt as per taste Oil for frying Recipe Take potatoes, shredded carrot and boiled peas in a mixing bowl and mash them nicely mixing together. Add ginger garlic paste, half of the bread crumbs, green chili paste, black pepper powder, salt as per taste and cheese to it. Mix well forming a dough. Chivda is a crunchy savory snack that is quick and easy to make. We can also call it Spicy Crunchy Flattened Rice. You can store this in an air tight container and can have it anytime you wish like while watching TV, as tea time snack also you can serve this to your guests when they visit you.  You can store this for 3-4 weeks in an air tight container. Chivda Ingredients 2 cups think flattened rice (thin poha) 1 tsp cumin seeds 1 tsp coriander seeds 3-4 green chillies 1 small cup peanuts 10-12 curry leaves 1 tsp poppy seeds 2-3 tsp roasted chana (daliya) 1 tsp turmeric powder Half tsp red chili powder Half tsp jeera powder Salt as per taste Powdered sugar as per taste 1 cup oil Recipe Roast flattened rice in a microwave for 1 minute. Paratha is a flat bread that originated in Indian Subcontinent. Parathas are often made for breakfast, lunch, dinner or tiffin boxes. Parathas are made of different varieties like plain paratha, stuffed or spiced paratha and many more. I usually make parathas when we have a rich gravy dish for dinner. Sometimes we like having parathas with pickle or chutneys of different types. Parathas go well with and dry or gravy vegetable, pickle, chutney or you can have it with butter or ghee. Today I am sharing a simple recipe of Spiced Paratha or we can also name it as Spicy Paratha. I made these parathas with Kadai Paneer and it was heavenly delicious in taste., everyone in my family loved the combination. Paneer Butter Masala is one of the most popular recipe in Indian cuisine. The perfect combination of spiciness and creaminess of its gravy makes it simply irresistible and versatile to be served with any Indian bread. You can serve it with roti, naan, tortilla, paratha or with steamed rice. Paneer Butter Masala Ingredients 250 gms paneer 1 tsp black pepper powder 10-12 cashews 2-3 tomatoes 1 onion 1 inch cinnamon stick 3-4 cloves 1 bay leaf 1 tsp kasuri methi (Dry fenugreek) 1 tsp sugar (optional) 3-4 tsp butter (I used unsalted low fat butter) 1 tsp cumin powder 1 tsp garam masala powder 1 tsp Kashmiri red chili powder Salt as per taste Water (if needed) Recipe Cut panner into cubes and arrange in a plate. Peanut Ladoo is a favorite snack for kids made up with just two ingredients Peanuts and Jaggery that tastes better than store bought candies and is healthy too. In India people keep fasting on some occasions, so these ladies are one of the best options to have on fasting day. This recipe is very simple and you can prepare this anytime you want to make.  Also you can store these ladoos in an air tight container for a week or more. Peanut Ladoo Ingredients 2 cups peanuts 1 cup jaggery Recipe Take peanuts and jaggery in a grinding jar. Grind them together to form a coarse mixture. Take out the mixture in a mixing bowl and mix it well. Now take small part of the mixture and start making balls out of it. Make all ladoos and serve or you can store them in an air tight container.

We all love chivda. There are various types of Chivdas that we get in market. Today the recipe I am sharing is an instant chivda recipe which is very easy and quick to make and fulfill your odd time hunger cravings. This is an instant chivda you can make and have as an evening snack or even for breakfast like I do ;) This Instant Chivda is my most favorite snack and thats the reason I am sharing it with you all. This is commonly known as Kachcha Chivda. Spinach Cheese Balls is a quick snack made with basic ingredients available at home. These spinach cheese balls are very easy to make and can be enjoyed as tea time evening snack, appetizer before lunch or dinner. This recipe being filled with cheese so the kids will love this dish too. Spinach Cheese Balls Ingredients Half cup spinach puree Salt as per taste 1 cup bread crumbs Half cup semolina (rawa/sooji) 1-2 tsp corn flour 1 cup grated mozzarella cheese (room temperature) 1 tsp chili flakes 1 tsp oregano Oil for frying Half cup semolina (for coating balls) Recipe Take bread crumbs in a mixing bowl add sooji and corn flour to it and mix well. Add salt as per taste and add spinach puree to it. Mix well and form a dough of it. If you feel the mixture is too soft you can add some bread crumbs of semolina for binding. Fruit Custard makes an amazing dessert recipe after meals. The thick creamy custard is loved by everyone whether kids, middle aged group, youngsters or elders. A very easy to make dish that you can prepare anytime when you are free and keep it refrigerated and serve chilled whenever you wish to have it. This can be made in bulk very easily without any extra effort. Fruit Custard Ingredients 2 apples 4 bananas 2 mangoes 1 cup chopped grapes 1 cup pomegranate  2 chikoos 5-6 cherries or strawberries (for garnishing) Saffron strands (for garnishing) Milk (I took 6 glasses of milk) 4 tsp vanilla custard powder 2 cups sugar Recipe Boil milk over a medium flame. I made these Ajwain Parathas for the very first time and they turned out amazing and very tasty. These parathas are very easy to make and can be eaten up with any vegetable, dal, chutney of your choice or pickle. You can serve these parathas to your guests as well.
