Lemon Rice

Lemon Rice is a South Indian cuisine that is very popular, made often in most homes for a quick lunch or dinner and is a special one. It is very tempting dish prepared by adding Lemon Juice to it while stir frying steamed rice and spices. The lemon rice preparation is the most easiest rice recipes and its Lemony taste and color will make your taste buds tingle as you see it. This is the most delicious way to turn plain rice into an exotic dish and is a perfect accompaniment to any veggies or curies.

Lemon Rice
Ingredients
  • 2 cups cooked rice
  • 8-10 curry leaves
  • 2 dry red chilies
  • 1 tsp mustard seeds
  • 2-3 tsp urad dal
  • 1 inch ginger
  • 1 tsp turmeric powder
  • Half cup roasted peanuts
  • 2 tsp oil
  • Juice of 1-2 lemons (depending on lemon size and your taste)
  • Salt as per taste


Recipe

Heat oil in a wok and add mustard seeds to it and let them crackle. Then add urad dal and fry for 2-3 minutes. Then add curry leaves and dry red chilies and mix well and fry for 1 minute. Now add roasted peanuts and mix well.

Now add turmeric powder to it and mix well. Now add cooked rice, salt as per taste and squeeze lemon juice over it and mix well.

Cover it with a lid and cook for 2 minutes on low heat.

Switch off the flame and garnish with coriander leaves and serve.
