Veg Burrito

Recently I shared Bean Taco, Lentil Soup and Salsa recipes. After sharing these recipes I am again sharing one more authentic Mexican recipe VEG BURRITO recipe with you all.
I love trying various dishes and also I love to make them at home and the most interesting thing is when they turn out to be awesome I even more Love to share the recipes with you all my dear Foodies.
Veggie Burrito is very easy to make and you can simply make them anytime ones you have the stuffing ready.
This being not at all spicy even kids enjoy having it in their lunch box or anytime. You can also serve these burritos to your guests. You just need to keep the stuffing ready and you are ready to go.....
Stuffing stays fresh for a week when you keep it refrigerated and store it in an air tight container.



Veg Burrito
Ingredients
  • 4 tortillas
  • 1 cup pinto beans
  • 2 jalapeƱos
  • 1 tsp black pepper powder
  • 1 tsp butter
  • 1 cup fresh chopped lettuce
  • 1 small onion finely chopped
  • 1 medium sized carrot
  • 1 cup salsa
  • 1 cup grated cheese
  • Salt as per taste

Recipe

Soak pinto beans in enough water for 5-6 hours or overnight.

Boil pinto beans till they are soft and mushy. Drain and keep aside.

Heat butter in a pan and add boiled pinto beans to it. Add little water and jalapeƱos to it and mash them.

We need a paste like texture. Add black pepper to it and season with salt and mix well. Switch off the heat and remove it in a bowl.

Now take tortilla in a plate and apply pinto bean mixture in the middle of tortilla. Spread lettuce, onion and carrots over it. Add salsa and grated cheese over it and roll tortilla nicely and serve yummy Veg Burrito.
