Dal Baati

Rajasthani food is incomplete without the mentioned fame Dal Baati.
Dal baati is an Indian dish comprising Dal (lentils) and Baati (hard wheat rolls). Though this dish is from Rajasthan it also famous all over India.
Again one of the most loved Indian dish we can say.


Dal
Ingredients
  • 2 cups lentils (tuvar dal)
  • 1 tsp mustard seeds
  • 2-3 pinches of asafoetida
  • 1 tsp turmeric powder
  • 2 tsp red chili powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 2 tsp garam masala powder
  • 4-5 pepper corns
  • 2-3 cloves
  • 2 bay leaves
  • 1 inch cinnamon stick
  • 1 medium onion chopped
  • 3-4 garlic cloves
  • Salt as per taste 
  • 2-3 tsp oil
  • Water

Recipe

Pressure cook dal for 3-4 whistles.
Finely chop onion and crush the garlic cloves.

Heat oil in pan or a wok. Add mustard seeds to and let them crackle and add onions. Sauté onions for 2 minutes and add crushed garlic to it. Cook onions and garlic till the rawness is gone.
Now add whole spices bay leaves, pepper corns, cloves to it and mix well and fry them with onions for 30-40 seconds.
Now add dry spices turmeric powder, asafoetida, red chili powder, cumin powder, coriander powder and garam masala. Mix all the ingredients well and fry the masalas for 30 seconds more.

Now add the cooked dal to it and mix well. Add salt as per taste and add 1 cup of water to it. Mix well and bring it to boil. Even after adding water, if you feel the consistency of dal is thick you can add some water again. We need a thin running consistency of dal.
Boil the dal for 3-4 minutes and switch off the flame.


Baati
Ingredients
  • 3 cups wheat flour
  • Salt as per taste
  • 3-4 tsp clarified butter (ghee)
  • Water to knead the dough
  • 1 cup oil or clarified butter (ghee) for greasing
Recipe

Take wheat flour in a mixing bowl. Add salt as per your taste and clarified butter (ghee) to it and mix well. Now start adding little water to and knead the dough. We need a firm dough for making baati.

For 1 baati - (Steps)
Make 3 balls out of the out of 3 different sizes big, small and smaller.
Roll rotis of 3 different sizes.
Grease all 3 rotis with ghee or oil.
Put the rotis over each other, and make a ball out of it joining them from every side.

Following the above steps make balls (baatis) out of remaining dough.

Heat a pressure cooker adding some water to it.
Grease a pan with oil and keep the baatis in it. 
Steam the baatis in pressure cooker for 3 whistles.

After the baatis are steamed nicely. Let them cool down for some time and cut them into 4 pieces each.

Heat up some oil in a wok and shallow fry the baati pieces till the baati becomes crispy and you get a nice golden color on it.

Serve hot with dal.

*Note - If you don't wish to use so much of ghee for making this recipe you can simply use any oil of your choice. Ghee makes the dish rich.
