Tawa Pulao

Tawa Pulao is one of the famous street foods in Mumbai. Its like a fusion of Pav Bhaji and Fried Rice into a single dish. This dish can become a quick treat for your guests.
The street vendors use a huge tawa to prepare this dish. This is a quick recipe if you have a left over rice.
Tawa Pulao goes best with yogurt, raita or onion lemon salad or any pickle of your choice.


Tawa Pulao
Ingredients
  • 2 cups of basmati rice (long grain rice)
  • 1 large capsicum (green bell pepper)
  • 1 large onion
  • 1 large tomato
  • 1 medium sized carrot
  • Half cup peas
  • 1 boiled potato
  • 3-4 cauliflower florets
  • 4-5 tsp coriander leaves.
  • 2-3 tsp pav bhaji masala
  • 1 tsp clarified butter (ghee)
  • 2 tsp butter

Recipe

Wash rice nicely. Add 1 cup of water to the rice and coo it in microwave for 10 minutes. Take the rice out and add clarified butter to it and mix well. Add 1 cup of water to it and microwave again for 5-6 minutes depending upon the quality of rice. 
After the rice is cooked spread it in a plate so the rice won't become soggy and keep it aside.

Slice onion, finely chop tomato, dice carrot, capsicum and potato. Chop cauliflower florets and finely chop coriander leaves.

Heat butter in a wok and add sliced onions to it. Cook them till they become soft and add finely chopped tomatoes. Add 2-3 pinches of salt to the so the tomatoes will be cooked faster. Cook till you get paste like texture of tomatoes and onions. Now add carrots, capsicum and cauliflower florets and mix well. Cook them for 2-3 minutes and add peas and boiled potatoes. Cook all them together for 1 more minute.

Now add pav bhaji masala to it and mix well. Now start adding rice to it. Add salt as per your taste and sprinkle coriander leaves over it. Toss the rice well. Cook it on medium heat for 2-3 minutes and serve hot.


*Note - You can increase the quantity of pav bhaji masala if you need more spicy rice.

*Note - You can also add slit green chillies too the veggies while cooking.

*Note - I used Everest Pav Bhaji masala, you can use any pav bhaji masala as per your choice. We get lot of options available in markets.
